Raw Organic Agave Nectar

Agave nectar is extracted from agave, which looks like cactus and grows in Mexico. Several species of agave, such as Agave tequilana, the Salmiana, and Rainbow varieties, can produce Agave nectar. Agave nectar is sweeter and more fluent than honey.

The juice, called piña, is expressed from the core of the agave in order to prodce Agave nectar. After filtering the juice, the carbohydrates are hydrolyzed into sugars. The complex form of fructose, which is called inulin or fructosan is the main component of carbonhydrate. The filtered, hydrolyzed juice becomes one kind of liquid which looks like nectar but less thinner than honey.

Agave syrup is composed of fructose and glucose. Agave nectar is famous for its glycemic index. Because its high fructose load, the glycemic content is much lower than other related natural sweeteners. Thus, if you are sensitive to sugar, you can choose Agave as alternative.
